GOOD QUESTIONS

FAQs

Straight answers about our coffee, how we roast, and how to order.

Everything you want to know

Which coffee should I choose?

Colombia Huila: chocolate, nougat, cherry and citrus, with medium acidity and a heavy body. Costa Rica Tarrazu: milk chocolate, honey and raspberry, with bright acidity and a light body. Guatemala Huehuetenango: dark chocolate, caramel, blackberry and vanilla, with medium acidity and a medium body.

What roast levels do you offer?

Most of the coffees we select enjoy being roasted at Light/Medium, Medium, and Medium/Dark. On occasion, we will restrict the roast to 1 or 2 specific roast levels in order to bring the best possible profile forward.

Is your coffee ground?

No. Every coffee comes as whole bean in a 12 oz (340 g) bag. Grinding right before you brew keeps the most flavor in the cup. Whole bean reduces the amount of surface area exposed to oxidation. Oxidation is the primary reason coffee goes stale.

Where is your coffee roasted?

Every batch is roasted at 7,844 ft above sea level in the Front Range of the Southern Rocky Mountains, near Estes Park, Colorado, on our outdoor fluid bed air roaster.

What is a fluid bed air roaster?

Instead of turning beans in a hot metal drum, a fluid bed roaster lifts and moves the beans on a stream of hot air, so each bean roasts evenly. We roast, taste and test each new coffee to find the roast that suits it.

Why does elevation matter?

Where the coffee cherry grows and where the bean is roasted both shape the cup. Our coffees grow at 1,200 to 2,000 meters, and we roast at 7,844 ft near Longs Peak (14,259 ft), so we watch the atmospheric pressure forecast closely when we plan a roast.

What do the details on each coffee mean?

Altitude is how high the coffee grew, in meters above sea level (masl). Process is how the cherry was handled after picking, for example Washed or Honey. Body, acidity and tasting notes describe the cup. Cup score is the coffee's specialty grade rating on a 100 point scale, where 80 and above is specialty grade. SHB stands for Strictly Hard Bean, a grade for coffee grown at high altitude. SHG stands for Strictly High Grown. EP stands for European Preparation, a process that includes additional hand sorting of raw coffee to remove any remaining defects.
